Red Bean Ice / Shake


I was a red bean hater.
But until last Sunday, my dad brought me to PappaRich and had lunch, I've ordered Red Bean Ice.
(I didn't know why did I ordered something I hate, haha.)
At that moment, I've discovered the goodness of Red bean. It was deliciously rich, satisfying...

Red bean is a kind of bean. So I think it's kind of high in protein.
Well, since I'm a vegetarian, it's okay to have extra protein right? maybe.
After I enjoyed this beautiful tasty drink, I've decided to make something like this JUST at home.
Think about it, you can control the sugar content and also, make it a low fat version!

Instead of coconut milk or evaporated milk, I've used Skimmed milk. Don't worry, it tasted great. I can never tell the difference.

Here's the ingredients I've used:

Serves 1:

8-9 tablespoons Red beans (cooked overnight in slow cooker without sugar)
9 tablespoons simple syrup (as shown below)
200ml milk (full cream/skimmed/low fat...whatever you want)

What to do:

For the simple syrup: bring 1/2 cup of sugar and 1/2 cup water into a saucepan. Cook them at low heat, stirring constantly to prevent crystallizing. Untill they've become very thick like honey when it's cooled. (Remember, when it cools, it gets thicker.)

Bring all ingredients in a blender. Blend until all ingredients combined. Serve.

For something more fancy like Papparich, mash some extra red beans with some of the simple syrup (depends on the sweetness you want) . When they look mushy, place them at the bottom of the serving glass then pour in the shake.

Try it, you'll never regret.
